Depending on the wine the grapes are mixed for a longer or shorter period of time and are gently pressed and the juice clarified by letting it set. In all special quality wines fermentation is only achieved with spontaneous yeast in order to preserve the original expression of the respective vineyard. The fermentation process is temperature-controlled and usually very lengthy, often into the spring. This gives the wines their very complex character and promises long durability. As a matter of course we do not use fining agents or other aids.
