Vinification Notes

The blend of Viura, Malvasia and Garnacha Blanca undergoes a cold soaked maceration for 14 hours. Fermented in new French oak barrels (Vosgues area) with a Burgundy Medium-High toasting. The wine is fermented with autochthonous yeast selected from their own vineyards. The wine then ages for 11 months in new French Oak Barrels on its own lees, with batonnage twice per week during the first six months
