Traditional winemaking and 100% de-stemmed. Temperature controlled fermentation takes place between 28 and 30ºC with autochthonous yeast selected from their own vineyards over a period of 9 days. Slow malolactic fermentation takes place in oak. barrels with extended maceration on the skins for 21 days. The wine ages for 24 months in Bordelaise barrels of French oak (60%) and American oak (40%) of which 30% new oak and 70% maximum 3 year old wines barrels. Bottled without filtration.
