The free run juice was macerated at 8-10 °C for 4-8 hours to extract a light coral pink colour. The grapes were pressed and first fermented in stainless steel tanks at 16°C. The Charmat method was used at 12°C and the second fermentation took place in tank over at least one month. Bottling and microfiltration took place at 8°C.The Rosato Spumante is made solely from lightly crushed Raboso grapes, macerated briefly to extract a coral pink colour.
