A pale lemon-coloured wine with a lovely aromatic and clean bouquet of acacia and a touch of honey. Surprisingly full-bodied, it shows great balance between its crisp green apple character and the richer honey and lemon flavours. The finish is dry and vibrant.
This 300 hectare co-operative is situated in Matelica in the Marches which is a smaller zone than Castello di Jesi. The co-operative has 24 organically cultivated vineyards which are situated further inland than Castello di Jesi, where the climate is more continental. The grapes were destemmed, pressed and clarified, then fermented in temperature-controlled stainless steel tanks at temperatures of between 15-17ºC for a period of 20 days. After fermentation the wine was aged in stainless steel vats of 300 hectolitre capacity for two months. The Terre di Valbona is unoaked to maximise freshness.
