A patchwork of terroirs Of the Domaine’s 120 hectares of land, only 46 hectares with the best exposures are used to grow vines that express their differences and characters, such as Brirette, Haut du Py, Muriers, Carcans, Montgenas, Poncié, Le Pré Roi, La Salomine, etc. These are unique parcels which benefit from various different exposures as well as a range of terroirs. Vinification Notes

Vinification: parcel-by-parcel vinification in small tanks (45 hl). Cold maceration with one part of whole bunches and one part of destalked bunches, followed by a long fermentation (10-15 days) to allow the terroir aromas to emerge. Gentle punching of the cap. Maturing: depending on the vintage, 40% to 60% ageing in oak barrels: 100% in mature oak barrels (1 to 4-years-old) to enrich the silky, velvety texture without sacrificing finesse. The remainder is matured for 12 to 13 months in small tanks to preserve freshness.
