Vinification Notes

Selected from the best vats, this wine was obtained by the "saignée" or bleeding method. After 10 to 14 hours of maceration, fermentation was carried out at 18°C. Once alcoholic fermentation is completed, the wine is racked off and stabilised to avoid malolactic fermentation. The wine was then stabilised and bottled in the spring to preserve its ripe fruit flavours.
