Sensational Shirvington and Oz Masterpieces

Shirvington was founded in 1996 by Paul and Lynne Shirvington (with sons Tony and Mark), with the planting of Shiraz and Cabernet Sauvignon vines in their first vineyard, Redwind.  The 16 hectares of red clay and limestone soil are located in Willunga, just south of McLaren Vale, that was chosen by the Shirvingtons for the area’s ability to consistently produce outstanding table wines of great character and quality.  Further purchases in 1997 and 2001 saw the development of two new vineyards, Kurrawyba and Manjalda, in McLaren Flat and McLaren Vale itself. Viticulturalist, Peter Bolte, has been involved in the wine industry since 1977, and his family have been farming in the McLaren Vale district since 1840. His care and expertise have provided Shirvington with consistent , high-quality fruit since their first crop in 1999

Shirvington has enjoyed some of the highest ratings ever awarded to Australian wines by the famed critic Robert M. Parker. Only two varietals are planted in the Shirvington vineyards…Cabernet Sauvignon and Shiraz, the signature red grape of Australia. When the second vintage of Shirvington wines were released (the 2001vintage), the Shiraz was awarded an almost unprecedented 99 points, with the Cabernet from that year close behind with a 96 rating. Since then, every vintage of Shirvington has been rated above 90 points.

These super-premium wines have won acclaim worldwide, especially the Cabernet Sauvignon that has frequently been referred to as ‘The Screaming Eagle of South Australia’. It is a hedonistic wine that flys the flag of fruit generosity proudly from the warm McLaren conditions but charms with its elegance and confidence. The use of high quality oak and a minimum 12 months barrel ageing render soft, fine tannins that give immediacy as well as a strong statement of good potential for the development of further complexity. This is really a fine, very fine wine. Like the Shirvington Cabernet Sauvignon, the Shirvington Shiraz is the product of estate grown fruit only from the original 1996 plantings.
