Wine tasting notes

This standout wine presents a rich, 'straw-like' pale gold with yellow hues. Subtle aromas of pastry and honeysuckle on the nose are followed by a round, rich mouthful which is nicely balanced by a touch of acidity on the finish.

Situated in Ladoix, which sits at the foot of the famous hill of Corton, in the north of the C̫te de Beaune, Domaine Chevalier produces white wines with the mealy and mineral quality that typifies great Burgundy. Much more personality than some négociants' wines from this appellation. Rich start and undertow and so much substance and expression that you could actually drink this already. Well done! Characteristic hint of almonds.

Vinification Notes

The grapes were hand-harvested then carefully sorted before being pressed and put into vats for racking. After cooling the must was transferred to barrel for fermentation (50% new oak is used for grand cru wines) where the wine remained for 12 months. It was fined in barrel, blended in tank then filtered. The wine was bottled in the January.
