Description

A wonderful Chablis from one of the top producers in the region, William Fevre. This non domaine wine is made from vineyards which sit on Kimmeridgian subsoil and enjoy ideal exposures for the production of a very fine wine. Combining lovely fruitiness with an attractive freshness and characteristic minerality this 2015 vintage wine boasts a fleshy and elegant bouquet revealing citrus, white fruits and flowers aromas . The mouth is fresh and supple.

Very refined bouquet, developing citrus, white-fleshed fruit and floral notes. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation.

Cooling and refreshing yet glossy, lush and expansive, it introduces stone, salt, iodine and lime zest for a finish that goes beyond that of the corresponding ?Champ Royaux? negociant bottling in complexity, not to mention saliva inducement. I would count on enjoying this through 2015. .

Tasted Jan 2015 - Green-fruited aroma. Attractively light chalky texture but rather insubstantial. (Seems to be a word I am using rather a lot.) Not for fruit lovers. (JH)

Burghound (2013)90 pts

This is a bit more aromatically elegant than the Champs Royaux with more obvious Chablis character as well. There is an appealing mix of intensity and richness to the delicious medium-bodied flavors that terminate in a clean and dry finale that is not as youthfully austere as it usually is. This is worth considering.

Vinification Notes

The Domaine Chablis spends 8-10 months in small stainless steel vats to preserve freshness, with 10% of the harvest matured in French oak barrels.
