Picked at the end of March, the grapes were completely destemmed and then partially crushed. The must was cooled by reducing the temperature immediately after crushing; the flavours and aromas were maintained by reducing the level of sulphur dioxide. The alcoholic fermentation took place in temperature controlled concrete tanks, for 10 days at 22°C with peaks at 28°C for a full diffusion of the skin components. The wine saw a total maceration period of 15 days. Natural malolactic fermentation took place at 16°C.
