Very pure and bright aromas that evoke botanicals: freshly sliced apple, hints of cucumber and a touch of mint. A Nashi pear flavoured palate is full bodied and seamlessly balanced with burnt citrus peel and cardamom; again highlighting the exotic fruit spectrum. The dry finish and acidity is perfectly balanced with the textural and enduring mouthfeel.

The nose is a hauntingly fresh bouquet of spring flowers with the freshness of green apples. The palate is textural but crisp, tension holding all the fruit and floral elements together. The finish is clean, pure and elegant. Classy stuff.

Vinification Notes

Riesling from Calvert and Elms vineyards was carefully whole bunch pressed, settled overnight, racked, then a long slow fermentation (6-9 weeks) with indigenous yeasts to almost complete dryness (3.2 g/L RS) that balances the natural crisp acidity. The wine rested on fine lees to build palate weight and with minimal processing to highlight the delicate Riesling characters before bottling in August.
