The palate is lively on the entry with crisp acidity, citrus peel on the entry with a terse but very focused finish. This is one of the best showings for Pieter Ferreira's sparkler.

Dependably delicious & stylish NV MCC. Lively, lightly rich & dry, generous, with classic yeast-hinting apple pie character. Dry but not tart. 10% ‘reserve' wine, blended in with younger pinot, chard for consistency.

Vinification Notes

Whole bunch pressing ensures fractional recovery. After settling of juice the two varieties are fermented separately. They are then crossblended along with reserve wine if necessary, bottled and left for 15 to 18 months yeast contact time before disgorgement.
