Carati literally menas 'barrels'. This is an old vines cuvée reared for 6 months in barriques and 12 months in large oak 'botti'. It has all of the incisive, razor sharep qualities of Barbera combined with a tremendous lacy, silky quality and absolutely brims with crushed blueberry, blackberry, mineral and cedar flavours.
Food matching
Master Sommelier Vincent Gasnier, in his book How to Choose Wine, recommends this as a great wine for dishes containing black truffles, as well as for roast pork, among other roast meats. He especially likes it with chicken cacciatore. According to Malcolm Gluck and Mark Hix a great match is braised goose in red wine.
