Wine tasting notes

Light ruby in colour, with a dark core. On the nose it is intense and powerful, with perfumes of dark cherry, plum and a touch of spice and smoke. Full-bodied and structured on the palate, with a smoky plum, blackberry and dark cherry character, ripe but well-structured tannins and a long, savoury finish.

Vinification Notes

The grapes were all de-stemmed but not crushed. Maceration lasted 27 days including one week of cold maceration (12ºC) in open-topped wooden vats, with infrequent pigeages. Fermentation took place using indigenous yeasts with no enzymes or tannins added. The wine was aged for 12 months in French oak casks (30% new oak) and was very slightly filtered but not fined before bottling.
