Made in a crisper, cooler climate, rather than a fuller bodied Pinot Gris style, this predominately Skilly Valley sourced wine is packed with the flavours of green pears, cinnamon spices, Fuji apples and driving natural acidity. Balanced by just a hint of restrained residual grape sugar, its sugar - acid - fruit balance is the perfect companion to a range of food dishes. Flavoursome and compelling, the long and juicy palate marries fresh limes, oriental pears and kitchen spices with crisp natural acidity in a rewarding and persistent fi nish. A wine easily consumed within months of bottling but will reward 2-3 years careful cellaring.

The unseasonally cool January set up the vintage superbly, the hand picked fruit carefully sorted, drained off skins quickly and fermented cool over three weeks before bottling early to preserve the vineyards vibrancy and unique character.
