Wine tasting notes

Intense red and black fruit with elegant notes of cinnamon spice on the nose. The palate is full bodied and savoury with a well-integrated oak component, ending with a long and rich finish.

The 2008 Cabernet Sauvignon is sourced from younger vineyard plantings now reaching maturity and is aged for 22 months in 80% new French oak. It has a very ripe, opulent bouquet with blackberry, cassis and dark plum all cloaked in slightly excessive vanillary new oak. The palate is medium-bodied with a velvety smooth entry with notes of dark berries and a touch of espresso. It needs a little more varietal character as it speaks more about the winemaking than the place, but it is certainly well crafted. Drink now-2017.

Bright red-ruby. Sexy aromas of redcurrant, plum, spices, mint and tobacco, with riper hints of chocolate and mocha. Plummy, sweet and deep; lush and seamless for a Constantia red (the alcohol content is 14.5%). Broad, fine-grained tannins are thoroughly buffered by plum and currant fruit. This plush, long, satisfying wine really perfumes the palate on the slow-building finish, which is complicated by notes of tobacco, spices and nutty, vanillin oak.

The focus these days at KC is on Vin de Constance and Sauvignon Blanc, but this Cabernet Sauvignon-based blend with Shiraz, Petit Verdot and Malbec, made by Bordeaux’s Hubert de Boüard, is worth tracking down. Smooth, leafy and refined with good concentration. Drink: 2017-22

Vinification Notes

Due to the warm and dry conditions we experienced in 2014, this vintage has great fruit expression. A lot of work and effort has been put into fine tuning our oak programme which is displayed in the delicate balance between fruit and oak in this wine. 2014 also sees the reintroduction of Shiraz to the Estate Red blend. Each parcel is carefully identified and blocks are split into multiple portions in order to harvest at the perfect ripeness. The grapes are then bunch and berry sorted to ensure that only the healthiest berries are selected. Malo-lactic fermentation takes place in 50 % new French oak barrels after alcoholic fermentation. The wine is then aged for 12 months before blending and bottling.
