Made from 100% Chardonnay grown on sunny north-facing hillsides near Ensérune in the Herault department of Languedoc-Roussillon on limestone gravel soils. Following pressing, the grapes are cold-settled, then 20% is fermented in French oak barrels, with the remainder fermented in stainless steel. 20% of the wine is aged in French oak for 6 months, 50% new, 50% one year old, and the rest is aged in stainless steel. Batonnage (stirring the lees) is used to give creaminess and texture to the finished wine.
