Wine tasting notes

This gold coloured wine with light green nuances, has an intensely aromatic nose of white flowers, honey, and pineapple, enhanced by hints of toast from the ageing. The full palate has a long tropical finish – think Mâconnais!

Vinification Notes

Made from 100% Chardonnay grown on sunny north-facing hillsides near Ensérune in the Herault department of Languedoc-Roussillon on limestone gravel soils. Following pressing, the grapes are cold-settled, then 20% is fermented in French oak barrels, with the remainder fermented in stainless steel. 20% of the wine is aged in French oak for 6 months, 50% new, 50% one year old, and the rest is aged in stainless steel. Batonnage (stirring the lees) is used to give creaminess and texture to the finished wine.
