Vinification Notes

Made from 100% Viognier grown on sunny hillsides facing north from Puicheric in the Aude and Puisserguier in the Herault departments of Languedoc-Roussillon where the micro-climate is comparable to the northern Rhône, and the calcareous sandy loam soils are ideal for this variety. Fermented in stainless steel, then aged for 4 months in stainless steel with batonnage which gives a creamy texture to the finished wine.
