Wine tasting notes

The Sauvignon Blanc, Collio is straw yellow in color with green tints. The nose is an intriguing marriage of pink grapefruit, green peppers, and fresh sage. The wine has a well-structured, silky body and fills the mouth with crisp, fresh citrus—lemons and grapefruit—and lingers long on the palate.

Vinification Notes

The grapes were destemmed and then given a brief period of skin contact at low temperatures before gentle pressing. 10% was fermented in 5-15 hectolitre barrels, 90% in stainless steel, with eight months’ ageing and batonnage, but no malolactic, before being blended and bottled unfined.
