Wine tasting notes

Dark cherry red, with a deep violet hue, this is an incredibly aromatic varietal Cabernet. Showing great intensity with bright berry fruits and mashed raspberry, together with licorice spice and espresso coffee. The palate is vibrant and fresh, building with layers of fruit, toasty oak and fine Cabernet tannins. It finishes with hints of anise spice, dark cocoa and cassis fruit. This wine is named after Sparky, who earned money to put himself through winemaking college as a left-handed Maitre D'.

Sarah and Sparky Marquis both come from winemaking families, and they both studied at university and planned to return home to run their family businesses. Reviewer : Lisa Perrotti-Brown.  Deep garnet-purple in color, the 2012 The Maitre D' Cabernet Sauvignon presents aromas of blackcurrant cordial, blackberry preserves and cloves with hints of baking spices and vanilla. Very big and very full, the palate is a little compacted though offers great richness framed by low to medium level chewy tannins and a long finish. Drink it now to 2018+.

This blockbuster Australian red wine is incredibly concentrated with great depth and length. On the nose are big, dark aromas and flavours of blackberry, blackcurrant and dark spices. Very mouth-filling and rich Cabernet Sauvignon. Pair with brontosaurus burgers. Highly recommended.

The nose exhibits ripe aromas of blackcurrant and black cherries with an overlay of cedary tobacco characters followed by spicy black olive end notes. Possessing Mollydookers trademark massive fruit weight the palate is awash with opulent cassis, liquorice and black cherry flavours over some cedary tobacco and spice characters. Liqueur like mouthfeel with velvety tannins and the lofty 16% alcohol surprisingly well integrated. Long aftertaste of cassis, liquorice, ripe black cherries, cedary tobacco characters and spice"

Vinification Notes

The grapes were grown on the Longbottom vineyard in Padthaway, the Mollydooker vineyards in McLaren Vale and the Joppich vineyard in Langhorne Creek. Barrel fermented and matured in 80% American and 20% French oak using 55% new and 45% one year old barrels.
