Pascal’s Anthrocyanes Rose is a blend of 67% Pinot Noir, 33% Chardonnay, vinified entirely in wooden casks, with a proportion of the Pinot Noir is given a two day maceration, the rest crushed and taken off the skins immediately. The Pinot character is striking, with bittersweet cherry notes, a touch of tangerine skin, wonderful delivery of fruit and a strongly vinous character that is big in personality, but also fine with it. Like so many of Pascal’s wines, this is gourmandise and worth sitting with a while.
Champagne Pascal Doquet Winemaker since 1982, I managed the family estate Doquet Jeanmaire from 1995 to 2003, both in terms of the management of the vine and the development of cuvées.
