Diapason, Grand Cru le Mesnil sur Oger (the new name for Pascal’s Le Mesnil cuvee). The idea and name stem from the concept of bottling one terroir (Mesnil), so you see one pure note of Champagne, just as a Diapason (French for tuning fork) gives you one pure note. This is a blend of 2006 (85%) and 2005 (15%), the vines in organic conversion back then. A touch of butter, then very fine taut Chardonnay notes that open into a vinous and pure expression of Mesnil minerality. This is very pure and focused, but with a sense of supple fruit behind the stones. Ample yet focused. Absolutely the perfect accompaniment to a warm foie gras and bayonne ham brioche roll.
Champagne Pascal Doquet Winemaker since 1982, I managed the family estate Doquet Jeanmaire from 1995 to 2003, both in terms of the management of the vine and the development of cuvées.
