The Rustenberg Stellenbosch Cabernet Sauvignon, is made with fruit sourced from the acclaimed Stellenbosch region of South Africa. Cabernet Sauvignon and Bordeaux varietals perform very well under the climate conditions of the region and Rustenberg is known to be one of South Africa's top producers of Cabernet Sauvignon and Bordeaux blends and varietals. The wine shows typical Cabernet Sauvignon flavour and aroma profiles of dark berries and tabacco with a well structured and lengthy palate.

A prestigious family owned winery near the town of Stellenbosch, Rustenberg has invested heavily in recent years; overhauling the cellar and building a new, inviting tasting room. The farm has a long pedigree, having been established in 1683 as a Dutch homestead. Wine Advocate/Robert Parker (2012)89 pts #215 Oct 2014. Reviewer : Neal Martin. The 2012 Stellenbosch Cabernet Sauvignon is the debut release. It comes from Simonsberg fruit from the estate and it spends 16 months in oak with 20% new wood. It has a dense bouquet with quite opulent, mint-fresh blackberry and blueberry fruit. The palate is sweet and rounded on the entry with tarry black fruit, well-judged acidity and fine precision on the finish that displays impressive structure and sense of reserve. This is a competent debut, though I think there is better to come.

Vinification Notes

The fruit is hand picked, crushed and destemmed into closed stainless steel fermenters and manual aerative pump-overs are performed with little to no extended maceration after primary fermentation. We are blessed with amazing fruit from the Rustenberg property: we always have wonderful colour and tannin in the wines, and we find we extract these compounds best over the course of the ferment through pumping over. The quality of tannin is then better and there is no need for extended maceration. Malo-lactic fermentation occurs in oak.
