In 1962, 19 vine growers from San Marzano whose families had farmed the land for generations combined their efforts to establish 'Cantine San Marzano'. San Marzano is a small village in the centre of the Primitivo di Manduria DOC region in the Salento sub-region of Puglia, in the heel of Italy’s boot. Through the decades this cooperative has grown significantly, attracting over 1,200 vine growers. This wine is made from 100% Primitivo grapes grown on thin, clayey soils which have a good presence of rocks. The grapes were harvested at optimal ripeness during the first week of September. The fruit was macerated for approximately 10 days to extract the desired level of colour, flavour, and fine tannins, and then fermented in stainless steel to preserve the vibrancy of fruit and varietal characteristics.
