In 1962, 19 vine growers from San Marzano whose families had farmed the land for generations combined their efforts to establish 'Cantine San Marzano'. San Marzano is a small village in the centre of the Primitivo di Manduria DOC region in the Salento sub-region of Puglia, in the heel of Italy’s boot. Through the decades this cooperative has grown significantly, attracting over 1,200 vine growers. The grapes underwent temperature controlled maceration for approximately 10 days to extract the desired level of colour, flavour and fine tannins. Alcoholic fermentation took place in temperature controlled stainless steel tanks with selected yeasts. The wine was made in an unoaked style to preserve the vibrancy of fruit and varietal characteristics.
