In 1962, 19 vine growers from San Marzano whose families had farmed the land for generations combined their efforts to establish 'Cantine San Marzano'. San Marzano is a small village in the centre of the Primitivo di Manduria DOC region in the Salento sub-region of Puglia, in the heel of Italy’s boot. Through the decades this cooperative has grown significantly, attracting over 1,200 vine growers. Made from a 50/50 blend of Sauvignon Blanc and White Malvasia grown on fine textured soft soils with good drainage, picked during the second and third weeks of August. The grapes were destemmed, crushed and gently pressed. Cold static sedimentation was followed by fermentation in stainless steel to preserve both the freshness and the fruit aromas of the grapes, and further aged in stainless steel to retain their fruit-driven characteristics.
