Simonnet Febvre

In 1840 Jean Febvre, a cooper from Montbard on the Côte d'Or, established Simonnet-Febvre in Chablis, specialising in the production of traditional sparkling wines. It is one of the oldest and most traditional maisons in the region. It is also the only winery in Chablis to produce Crémants de Bourgogne, which has a small labour-intensive production mostly undertaken by hand. Today they own vineyards in Chablis, Chablis Premier Cru Mont de Milieu, Chablis Grand Cru Preuses, Grand Auxerrois and Coteaux de l'Auxois. The latter is a historic area - its wines wines were appreciated at the court of Versailles, but the vineyards were hit hard by the scourge of phylloxera in the 1800's. Simonnet-Febvre are once more elevating the wines of this forgotten region to their former glory. Simonnet-Febvre was bought by Maison Louis Latour in 2003, and the wines are now produced at a new winery in Chitry just outside Chablis. They farm sustainably and follow an organic philosophy. Simonnet-Febvre craft a wide portfolio which express the different terroirs and appellations of Chablis and Grand Auxerrois. The house style is precise and pure with a mineral backbone.
