In 1840 Jean Febvre, a barrel cooper from Montbard, founded the winery which is now Simonnet-Febvre. Today it remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as C̫te d'Auxerre and Irancy, and remains the only house in Chablis to produce the regional sparkling wine, Cr̩mant de Bourgogne.
Maison Louis Latour bought the company in 2003, along with a small domaine of Grand Cru, Premier Cru and Chablis vineyards. Jean-Philippe Archambaud joined as its winemaker the following year. Before he arrived in Chablis, Jean-Philippe worked made wine in France and Australia. Since his arrival the wine and packaging have been given a 'makeover' and the company has moved to a new winery just outside Chablis, near the village of Chitry.
