Simonnet Febvre

In 1840 Jean Febvre, a barrel cooper from Montbard, founded the winery which is now Simonnet-Febvre. Today it remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as C̫te d'Auxerre and Irancy, and remains the only house in Chablis to produce the regional sparkling wine, Cr̩mant de Bourgogne. Aug 15 - Neal Martin - The 2013 Chablis 1er Cru Montmains has a pretty lime flower, beeswax and flint-scented bouquet that gains more vigour as it opens up in the glass. The palate is soft on the entry and unfortunately way more simplistic than the aromatics. There is decent weight here but there appears to be a little dilution toward the finish. Tasted Oct 2014 - 100% Chardonnay from the classic Kimmeridgian soil of the area. Vineyard is 37 years old and on the lower, frost prone slope of the hillside very close to Chablis. Vines trained to Guyot double and tended by hand. Grapes gently pressed in a pneumatic press and cool-fermented in stainless steel tanks at 17 - 21 °C with selected yeast. The new wine spent 11 months resting on fine lees, with full natural malo. Winemaker Jean Philippe Archambaud. Suitable for vegetarians and vegans. Delicate but definite Chablis style – dry, subtle, a little bit creamy, and something a little bit musky. For three pounds more than the basic Waitrose Chablis, this is worthy step up. (RH)

Here the nose is much more floral in character with notes of sea breeze, oyster shell and pear. The textured and once again lightly mineral-inflected medium-bodied flavors display solid length and slightly better overall depth on the sappy finale. This is quite forward and should drink well young.

Vinification Notes

Simonnet Febvre Chablis is stainless steel tank fermented with a further 6 to 10 months resting on its lees in tanks. The wine will age for up to 7 years after the harvest but also drinks really well from 12 months after the vintage.
