Vinification Notes

This is an uber-serious wine coming from two distinct sites. The Shiraz from a dense red clay infested vineyard that has some rather gnarly vines. The yields are kept low and the quality is kept quite high. The Mataro from a light, free-draining site in the lower reaches of the Vale.
