Wine tasting notes

Crimson red with purple hues. The bouquet is a bright and lively representation of our classic house style – the southern Margaret River perfume of red and blue fruits with a violet lift. Subtle mocha and a sweetness from the vanillin oak complement the fruit aromas. Medium bodied, with a fresh and vibrant palate. Raspberry, strawberry and vanilla coming together as one, with a subtle freshly plucked mint character. Oak integration is seamless. There is a sense of both elegance and power; the flavours deepen and spread across the palate, freshened with balanced acidity, building to a fine and silky Cabernet finish.

I was taken by this wine. It’s just so fragrant, so classically structured, so blessed with varietal fruit flavour. Dust, tobacco, an ooze of blackcurrant, and a deft application of integrated chocolate and lead pencil-like oak. Bay leaf notes play about the edges. No shortage of either tannin, or length.

Vinification Notes

All the individual vineyards that contribute to this Cabernet Merlot are vinified separately. After fermentation on skins the malolactic is conducted in tank prior to barrel maturation. Maturation occurs in their favourite French tonnellerie’s barriques for 24 months. The length of time in oak is important for the integration of the oak and fruit tannins in the wine.
