Wine tasting notes

In the glass the wine is beautifully restrained, with cured meat, lavender and purple petal notes. On the palate, it is luxurious and well defined, offering red cherry spice, Victoria plum and white pepper flavours.

Topiary Wines

Sited high in the beautiful Franschhoek Valley to the east of Stellenbosch, Topiary is owned by two renowned French vignerons; Philippe Colin of Chassagne-Montrachet fame and Serge Jaczynski, a wine agent and consultant sommelier. Since acquiring the estate in late 2014, Philippe’s first full harvest at the helm coincided with the stunning 2015 vintage. Vinification Notes

Grapes were sorted and destemmed before a satellite tank transferred them to open stainless steel fermentation tanks via a gravity pulley system. Fermentation took place using wild yeasts, and with two pump overs a day. After ten days the wine was removed from the skins and placed in French oak, of which 25% were new, for 12 months.
