Food Matching

Like many South African wines, this one tips its hat respectfully to both Old World and New World styles of Sauvignon Blanc, and is delightfully versatile. It can be drunk on its own and makes a great party wine, and can take on all kinds of fish and shellfish in myriad preparations, including creamy and spicy sauces. It is a great accompaniment to big salads, and, though it doesn't really work with meats, could take on a chicken salad with a tangy dressing. While it isn't a match for most cheeses, try it with goats' cheese, on its own or in a salad. It can take on smoked fish but not anything too salty.

The wine shows an abundance of tropical fruit, pear, grapefruit, litchi and green fig flavours on the nose that carry through to the palette. The mouth feel is mineral, crisp yet rich, fruity and coats the pallet evenly. The well balanced acid and fresh flavours ensures a long lingering aftertaste.

Vinification Notes

The grapes where harvested at different levels of ripeness depending on fruit characters, to ensure maximum fruitiness and complexity. The juice was handled reductively throughout the winemaking process and fermented very cold in specially designed stainless steel tanks.
