Domaine Bernard Defaix

Bernard Defaix, the fourth generation from a family of winemakers, established his domaine in 1959 with just 2 hectares of land. His sons have been managing the business for the past two decades or so. It is a real family affair, with Sylvain in charge of the vinification, ageing, bottling and preparing orders, Didier taking care of the vineyard and the general management, and his wife Helene looking after commercial and administrative aspects. The domaine is situated in Milly, in the heart of Chablis. Now 27 hectares under vine, planted with Chardonnay in the Premier Crus climats of Côte de Lechet, Vaillons and Lys, which are planted on Kimmeridgian chalk, and the appellations of Chablis and Petit Chablis, with additional plots planted in Auxerre with Aligoté for the production of Bourgogne Aligoté, Sauvignon Blanc for Saint-Bris, and Pinot Noir for Bourgogne Rouge. Their Vieille Vigne Chablis is made from 50 year old vines. All the vineyards are farmed organically with some biodynamic approaches. Their organic policy also extends to their cellar, and they are proud to say that they make organic wines - not just wines produced from organic grapes. At Domaine Bernard Fefaix fermentation is done in either stainless steel tanks or oak depending on the cuvée, and the wine stays on its lees for between 8 and 12 months, moving the lees by batonnage in barrel, and pump-overs in tank. Each wine expresses the typicality of its appellation, showcasing the character of each site. These are elegant wines, precise, pure and mineral and have received good scores from many critics.
