The grapes are hand harvested by bunch selection to ensure that the best fruit is chosen. The bunches are destemmed followed by fermentation and maceration for over 25 days. The wine undergoes gentle pneumatic pressing followed by natural malolactic fermentation. The wine is aged for 9 months in a mix of French and American oak barrels before being filtered and bottled.
