Wine tasting notes

Excellent depth of colour with a distinct purple hue. Brambly, minty aromatics coupled with tobacco leaf, plum and spicy nuances. The palate has a strong tannin structure with power and great length. There is rich dark berry fruit coupled with earthy, leathery undertones.

Willunga 100 is from McLaren Vale, south of Adelaide and aims to produce unique and distinctive wines which capture the essence of the region. The grapes come from a range of selected vineyards in McLaren Vale and Adelaide Hills (for the whites), including some over 50 years old. February , 2016. The cassis fruit of this bright cabernet shiraz blend has attractive freshness on the nose, florals and fruits make for an attractive wine. The oak is gently placed in the mix adding savory spice. The palate's tangy, elegant and focused, delivering a neat thread of ripe blue fruit flavor. Certainly shows how well this blend can work. 70/30% from several vineyards, each parcel separately warm-fermented with pump overs and plunging, mainly matured in new and used French oak, some retained in stainless steel. Deep, dense crimson-purple; a full-bodied blend with a full-blooded serve of savoury tannins. The balance is there to reward those who are patient.

Vinification Notes

Parcels of both Cabernet Sauvignon and Shiraz were harvested from a range of suitable blocks during March and April. Some cooler sites were used for Cabernet Sauvignon to enhance this part of the blend profile, while the ripe, juicy Shiraz adds tannin and spice. Individual vineyard blocks were fermented separately, using a range of different techniques for complexity. The wine was matured in French and American oak barrels for about 11-14 months.
