The 2015 Chablis (Domaine) comes from 48 hectares of Fevre's own vines located close to Premier and Grand Crus, the average age of vine is 40 years and the grapes are picked by hand. The nose is a little closed at first with hints of caramelized pear and a touch of white peach. The palate is clean and fresh, tightly wound and steely at the moment, with respectable salinity for a 2015. There is impressive definition and mineralité on the finish, considering this is a Village Cru. This comes recommended.

Very pale, bright yellow. High-pitched lemony nose suggests 2014 more than 2015. Rich, ripe and powerful, showing good stuffing and dusty extract for village wine. Citrus and floral flavors are nicely framed by ripe acidity. Finishes with sneaky length. (2014)16 pts

Tasted Jan 2016 - A honeyed, rather smudgy edge to the nose. Lots of texture at this point and a chalky finish. I’d wait a little while.

This is delicate, featuring lemon, herb and stone flavors lifted by the fine acidity. Touches of seashore and oyster shell add depth as this coasts to a clean finish. Drink now through 2018

This wine has simple fruit with fresh acidity, touches of lemon and a crisp, tangy texture. Still young, it offers a flinty edge and a steely aftertaste, both of which will merge into the apple and grapefruit flavors over the next few months. Drink from 2016.

Burghound (2014)89 pts

A cool, pure and slightly more elegant nose speaks of citrus, oyster shell, white flowers and iodine hints. There is excellent volume for a villages level wine with very good mid-palate concentration present on the medium-bodied flavors that conclude in a citrusy, clean and very dry finale. I very much like the delivery and this too will need at least a year or two of bottle age first. Recommended as overall, this delivers very fine quality.

Vinification Notes

The Domaine Chablis spends 8-10 months in small stainless steel vats to preserve freshness, with 10% of the harvest matured in French oak barrels.
