Orvieto is one of Italy’s most prominent and historic white wines of which there are two classifications, Orvieto and Orvieto Classico, with about 75% overall being Classico. Production is centralised around the town Orvieto in Umbria where the rich volcanic and tufa limestone soils give excellent expression to the grapes. The majority of wines that are produced today are dry. This is in stark contrast to the Orvieto wines going back in history which were often made using botrytis infected grapes to produce lightly sweet to deep golden dessert wines. The blend of grapes has, as a result, changed over time; originally, Trebbiano Toscana was in vast dominance with Grechetto, Verdello, Canaiolo drupeggio, and Malvasia making up the remainder. However, in more recent times, Grechetto has become dominant as it gives a more fruit-forward, deeply coloured style. Also, Sauvignon Blanc and Riesling have been added to the blend to make a more interesting and modern wine, although, this must be labelled Vino da Tavola and not DOC.
