Tasting Note

The nose is highly perfumed, showing aromas of black cherry, cassis, plum, desert sage, sandalwood and dusty minerality. Secondary aromas reveal notes of cigar box, leather, bay leaf and black olive. The palate is rich and weighty, offering generous flavours of black raspberry, spicy currant and blueberry compote with impressions of Bing cherry, boysenberry, fig and baking spices. Ripe, fine-grained tannins carry into a structured finish with lingering accents of cherry, espresso and vanilla.

Product Notes

DAOU Discovery Cabernet Sauvignon is a delightful Californian wine characterised by its harmonious fusion of rich flavours and elegant complexity. Prominent notes of ripe blackcurrant, cherry and plum dance amongst subtle undertones of herbs and spices. Its balanced tannins and gentle oak nuances round off the palate perfectly, creating a velvety smooth finish, while the deep ruby hue adds an extra touch of sophistication. This robust and yet refined wine, with its expressive fruit-forward profile, perfectly complements hearty meat dishes, offering an exquisite dining experience. DAOU Discovery Cabernet Sauvignon is, without doubt, an indulgent treat for every fine wine enthusiast.

About the Winery

DAOU

Nestled amidst the mesmerising expanses of California's Paso Robles region, DAOU Winery is a veritable haven of viticulture. It is a place where passionate artistry melds with scientific precision, resulting in wines of unrivalled quality and expressiveness.

The winery is presided over by the DAOU brothers, Georges and Daniel, who've imbibed their passion for winemaking from their Lebanese forefathers. The duo ensures that the essence of their heritage harmoniously coalesces with the terroir of the Golden State, yielding wines that are profoundly expressive of their unique identity.

Spread over an expansive 212 acres, the vineyard is punctuated with rolling hills. The environment, furthermore, blessed with a consistent marine layer induced cool breeze, provides the perfect conditions for growing Cabernet Sauvignon and Bordeaux varietals. Sun-drenched during the day and considerably cool after sunset, these climatic idiosyncrasies contribute towards striking balance and elegance in the wines produced.

The winery is also renowned for its adept use of technological innovation in the vineyards and cellars. Forward-thinking practices including drone surveillance, micro-fermentation, and barrel experimentation fundamentally enhance the winemaking process and, consequently, the quality of the wine.

DAOU Winery also offers an exemplary visitors' experience. From sumptuous culinary offerings paired with exquisite wines, to the dazzling vista of the vine-swathed hills from the tasting room, it truly is a sensory delight. Whether you're a scholar of enology or a novice to the world of wines, a day spent at DAOU Winery is bound to be an enlightening and enjoyable experience.

All in all, DAOU Winery is a testament to the splendour of Californian wine-making combining tradition, mastery and innovation, resulting in wines that stir the soul and tantalise the palate. It's a magnificent spectacle of viticulture that's definitely worth embarking on, especially for those that appreciate wine's magical relationship with the land from which it springs.
