Food matching

A fun, cheaper alternative to Champagne for a party or an aperitif, this will take on many of the same foods that good, non-vintage Champagne can take on. Try this with all kinds of fish and seafood, including smoked and raw, and don't be afraid to try it with all kinds of spicy food, such as Indian, Chinese and Thai. Because of its good, clean acidity, it can also take on richer, cheese dishes and dishes containing cream, and Michel Roux suggests deep-fried almond-coated Camembert.

The palate is lively on the entry with crisp acidity, citrus peel on the entry with a terse but very focused finish. This is one of the best showings for Pieter Ferreira's sparkler.
