Nestled in the warm heart of the Burgundy wine region, Domaine Paul Pillot is synonymous with heritage, craftsmanship and stellar French winemaking. This winery hailing from Chassagne-Montrachet is a family-run affair, now being stewarded by the fourth generation, Thiébault Pillot.

Domaine Paul Pillot is famed for its exceptional white wines but also produces noteworthy reds. All their wines are resplendent with the signature terroir of premier and grand cru vineyards from which they are cultivated. The bouquet, certainly, does confer with the rich, earthy Burgundy landscape and teems with notes of crisp fruit, delicate minerality, and intricate complexity. Much of this is attributed to traditional Burgundian winemaking techniques, hand-harvesting the grapes and encouraging natural yeast fermentation.

Thiébault also possess innovative sensibilities, ushering in modern technology. He is meticulous about maintaining minimal intervention and coaxing out the natural personalities of the wines. All wines are aged in French oak barrels; with the percentage of new oak lying between 10% to a third depending on the vintage and designation. The choice is left to the vagaries of each harvest, making every year's yield unique and authentic.

One of the standout cuvees from this winery is the Chassagne-Montrachet Premier Cru La Romanée. The white wine has rich orchard fruit flavours complemented by subtle oak nuances, cementing its place as a favourite among wine connoisseurs and an exemplar of the winery’s winemaking philosophy.
