William Fèvre is descended from a family who had lived in the Chablis region for over 250 years. In 1959 he founded his own domaine with 7 hectares of vineyards. More vineyards were acquired over the years and now 78 hectares are under vine spread through 90 different parcels, making William Fèvre one of the biggest landowners in Chablis. 15.9 vineyards are classified as Premier Cru and 15.2 as Grand Cru; no other Chablis producer can claim such a wide variety of vineyards. William retired in 1998 and the estate was sold to Joseph Henriot, and is now part of Maisons & Domaines Henriot. The vineyards are cultivated sustainably with organic principles, gaining High Environmental Value status [the highest level of environmental certification] in 2005. Yields are limited; all the grapes are hand-picked and they use old barrels with an average age of 6 years, rather than new oak. William Fèvre is one of the most prestigious domaines in Chablis: a benchmark for classic wines, expressing the terroirs of the region, revealing the subtle nuances and true characteristics of each climat.
