Champagne

Champagne is a protected name from a legally defined area of Northern France and is a sparkling wine made from Chardonnay, Meunier and Pinot Noir grapes. Vintage Champagne must remain 36 months on yeast (in the bottle) prior to sale while most non-vintage varieties have a legal minimum of 15 months but most decent NV Champagnes have at least 24 these days.  From Sarcey to Veuve Clicquot, from Ruinart to Rothschild, from Bollinger to Heidsieck, all the famous names are represented here and every bottle contains a minimum of 250 million bubbles.  Is that all?  Do I hear you say “Bottoms up”?  Yes, indeed -  Champagne bottles are placed heads down in storage  at a 45° angle and the Riddler comes around every day to turn every bottle just a little  so the sediment from the base and the side collects rather in the neck. 
However, the definitive words on the subject are from Madame Bollinger herself: 
“I drink Champagne when I’m happy and when I’m sad. 
Sometimes I drink it when I’m alone. 
When I have company I consider it obligatory. 
I trifle with it if I’m not hungry and drink it when I am. 
Otherwise, I never touch it―unless I’m thirsty.”
