Bodegas Ximénez-Spínola is one of Jerez’s most distinctive family producers, remarkable for dedicating its entire production to a single grape variety: Pedro Ximénez. Based in Las Tablas, between Jerez de la Frontera and Sanlúcar de Barrameda in Andalucía, the winery combines centuries of family history with an unusually individual approach to the wines and brandies of southern Spain.

The family’s documented winemaking history dates to 1729, when Phelipe Antonio Zarzana Spínola established the business. Through successive generations and family connections, the estate evolved into Ximénez-Spínola. Today it remains independently family-owned, with José Antonio Zarzana representing the ninth generation and overseeing the continuation of this highly specialised project.

Unlike most producers in the Jerez region, Ximénez-Spínola does not work with Palomino. Instead, Pedro Ximénez forms the basis of everything produced, from dry and naturally sweet wines to oxidative styles and aged brandies. Production is deliberately limited, with an emphasis on long maturation and maintaining quality rather than pursuing volume.

Its portfolio demonstrates the remarkable versatility of Pedro Ximénez. Wines include Exceptional Harvest, produced from late-harvest grapes; Fermentación Lenta, made through an exceptionally slow fermentation process; and the intensely concentrated Vintage Pedro Ximénez, produced from sun-dried grapes. The house also produces Old Harvest Medium, mature solera wines and highly regarded brandies distilled exclusively from Pedro Ximénez.

Ximénez-Spínola’s identity rests on patience, rarity and specialisation. Its wines move far beyond the conventional image of Pedro Ximénez as simply a sweet Sherry grape, revealing remarkable aromatic complexity, texture, freshness and ageing potential across an unusually diverse range of styles.
