About Domaine Jaeger-Defaix

Domaine Jaeger-Defaix is a family-run Burgundy estate based in Rully, in the Côte Chalonnaise of France. The domaine is owned and managed by Hélène Jaeger-Defaix, who represents the fifth generation of a Chablis-rooted winegrowing family. After working in the wine trade and alongside her husband, Didier Defaix of Domaine Bernard Defaix in Chablis, Hélène took over her family’s historical vineyards in Rully starting in 2002. Today, she oversees both vineyard and cellar operations, applying the same meticulous, organic-focused philosophy practiced by the Defaix family in Chablis.

The domaine is located primarily in Rully 1er Cru sites, notably Les Cloux, Rabourcé, and Les Préaux, considered some of the appellation’s best-exposed parcels. The vineyards are farmed organically, with low yields and careful hand-harvesting to preserve purity and finesse. The aim is to express the mineral-driven elegance typical of Rully’s limestone soils.

Domaine Jaeger-Defaix produces both white and red Burgundy, with Chardonnay and Pinot Noir serving as the estate’s core varietals. The whites are known for their tension, citrus-inflected freshness, and subtle oak integration, while the reds offer supple fruit, fine tannins, and a delicate, terroir-driven profile. The domaine has become a reference point for high-quality, artisanal wines from the Côte Chalonnaise.
