In order to achieve the full flavours in this wine without making it too heavy, we use fruit from some of our younger vines. This allows a delicateness to pervade while still offering alluring length. Then the wine nestles, undisturbed in our cellars for 18 months with gentle exposure to French oak. The resulting wine is soft and moreish, and certainly ready to drink. Not need to decant if you don’t want to, just make sure you chill it slightly if the weather is very hot.
