About Gavalas
Gavalas Winery is one of Santorini’s oldest family-owned estates, based in the traditional village of Megalochori. Housed in a historic stone building constructed in the island’s distinctive architectural style, the winery was once also used as a canava, a traditional winemaking and distilling facility. Many original features have been carefully preserved, including the old cellars and grape-stomping rooms, while modern winemaking facilities and state-of-the-art equipment have been added to support precise, high-quality production.
Today, the estate is led by fourth-generation winemaker George Gavalas together with his son Vagelis, continuing a family tradition deeply rooted in Santorini’s viticultural heritage. Their focus is firmly on expressing the distinctive character of the island’s volcanic soils and preserving its remarkable wealth of indigenous grape varieties.
Assyrtiko naturally plays a central role, alongside traditional varieties such as Aidani, Mandilaria and Mavrotragano. Gavalas is also particularly notable for working with exceptionally rare local grapes, including Katsano and Voudomato, helping to safeguard varieties that form an important part of Santorini’s viticultural history. The resulting wines combine tradition with modern precision, offering an authentic expression of the island’s unique landscape and winemaking culture.
